The industrial product of LUCKYSTAR ® technical grade xanthan gum is a high molecular weight polysaccharide produced by fermentation with Xanthomonas camperstries under the conditions of purified, dried, milled into powder. It is a high weight polysaccharide with good flowing property and shearing resistance as well as the good function of water affinity
